Broccoli “Meatball” Pasta

I’ve been asked a few times whether I plan a menu a week ahead. Unfortunately, I don’t.
Brocolli MeatballI’m not that organized.  I buy staples weekly, and then I go from there. Sometimes it backfires, but most of the time I manage to whip something up.  I wanted spaghetti, but had no ground meat for meatballs.  I decided to make broccoli cheese “meatballs” instead.

You can also serve it in a patty form or tater tots and serve it with a tomato dipping sauce.

Ingredients:

  • 1 cup broccoli
  • 1/4 cup bread crumbs
  • 1 egg
  • 1/4 cup cheese
  • Salt and pepper to taste
  • Dash of garlic powder
  1. Steam broccoli
  2. Add bread crumbs, egg, and cheese
  3. Blend and form into balls with wet hands. I used a cookie scooper for unifority.
  4. Cook in olive oil on medium until brown
  5. Served over angel hair pasta and your favorite store-bought pasta sauce.
