I’ve been asked a few times whether I plan a menu a week ahead. Unfortunately, I don’t.
I’m not that organized. I buy staples weekly, and then I go from there. Sometimes it backfires, but most of the time I manage to whip something up. I wanted spaghetti, but had no ground meat for meatballs. I decided to make broccoli cheese “meatballs” instead.
You can also serve it in a patty form or tater tots and serve it with a tomato dipping sauce.
- 1 cup broccoli
- 1/4 cup bread crumbs
- 1 egg
- 1/4 cup cheese
- Salt and pepper to taste
- Dash of garlic powder
- Steam broccoli
- Add bread crumbs, egg, and cheese
- Blend and form into balls with wet hands. I used a cookie scooper for unifority.
- Cook in olive oil on medium until brown
- Served over angel hair pasta and your favorite store-bought pasta sauce.
