Rice Cakes

Dress up your rice cakes. Add a little more nutrition by adding toppings! Rice CakesWe added peanut butter and banana on one. The other rice cake had avocado and cheese. It’s an easy fast snack.

 

 

Pumpkin Coconut Granola

Oh the smell of Thanksgiving in Spring! My house smelled so delightful after making this awesome recipe from Super Healthy Kids. I didn’t know granola would be so easy to make until I tried this recipe.   It’s delicious and healthy!  Did I mention delicious?

Pumpkin GranolaI’m a hard please when it comes to granola too!  Without further ado, here’s the recipe. Hope you enjoy it as much as we did! My son ate the entire jar and wanted more.

This is also great to go and packed.

Ingredients:

  • 1 cup oats
  • 1 tablespoon chia seeds
  • 1 teaspoon pumpkin pie spice
  • 2 tablespoons butter
  • 2 tablespoons maple syrup
  • 1 tablespoon pumpkin purée

1. Combine first 3 dry ingredients in a bowl

2. In a skillet add butter, maple syrup, and pumpkin purée, until melted

3. Add dry ingredients until toasted or desired texture Once toasted you can spread the mixture out on a cookie sheet (I didn’t do this step)

4.  Serve with greek yogurt and fruit

Hawaiian Sliders

I love Hawaiian burgers. If you don’t know what it is, basically it’s a burger with pineapple.Hawaiian Sliders If you’ve never tried it you’re missing out! I also had a someone ask me what to use instead of honey. I used agave nectar for this recipe, and it worked great. You can definitely use honey just remember no honey before one years of age.

Ingredients:

  • 1/2 tsp finely chopped ginger
  • 3 tbs agave or honey
  • 1/4 tsp garlic powder
  • 1/4 cup tamari or low sodium soy sauce
  • 1 lb ground beef
  • 1 grated or finely chopped carrot
  • Pepper to taste

Other:

  • Pineapple
  • Swiss cheese
  • Lettuce
  • Hawaiian rolls

1. Combine all of the above and mix well

2. Pan fry in a little oil

3. Assemble burger and enjoy!

Homemade Banana Walnut Ice Cream

Perfect healthier option to curb your sweet cravings! Banana Walnut Ice Cream This has no refined sugar and no preservatives.

  • 2 bananas
  • 1/2 cup of heavy cream
  • 1/4 cup walnuts
  • honey (no honey before one, banana is sweet already, so this is just extra)

1. Blend all ingredients except honey, unless you want it

2. Freeze for about an hour to an hour and half. Any longer and it will be too frozen. You an let it defrost a bit.

Just remember it won’t have the same consistency as store-bought ice cream, but it’s pretty close. You can also top it off with more walnuts and honey!

Banana Topping

Ingredients:

  • One banana (cut)
  • Honey
  • 2 tbs butter

1. Cook in butter until brown. Then add honey.

2. Serve on top of ice cream

Breakfast Toast Cups

These are fast and easy! It’s also a great on the go option. Egg Toast CupsI’ve used my Tuna Salad Filling instead of eggs before. The video below shows two options, one with a sunny side up egg and another with scrambled eggs. I still prefer to give my toddler fully cooked eggs, so I gave him the scrambled.

Ingredients:

  • 4 slices of fresh bread
  • 4 eggs
  • Seasoning of choice, we used 21 Seasoning Salute from Trader Joes
  • Chopped spinach (optional)
  • Shredded Cheese
  • Olive oil spray for muffin tin

1. Preheat oven at 350F

2. Use a bowl to mold out a circle shape. I use a pizza cutter to make it easier to shape. (See video). Remove ends.

2. Carefully place bread circles into a greased muffin pan

3. Add either a raw egg, or a cooked scrambled egg. I topped the scrambled egg with shredded cheese.

4. Sunny-Side Up Eggs – bake at 350f for about 10-12 minutes (depending on how cooked you like your egg). Scramble eggs take only about 5 minutes, just enough for cheese to melt and for bread to become slightly toasted.

Creamy Mushroom Chicken

I needed to make something that would cook fast because it was getting close to dinner time. Cream of Mushroom ChickenMy husband suggested just throwing in cream of mushroom chicken in a slow cooker with some chicken.  The last time I made it was flavorless. So I decided to change it up. I’ve had lots of luck with adding cheese and heavy cream to baked food lately, so I added it to it!

I’m so glad I didn’t cook it in the slow cooker. It came out perfect in the oven. Juicy, tasty and moist! It only took about an hour to cook and five minutes of prep time. By the way I used chicken thighs since I didn’t have breast, but I’m sure it will be great too.

Ingredients:

  • 4 boneless chicken thighs, breast will work too
  • 1 tbs minced garlic
  • 1 tsp salt (to taste, but I think this depends on your soup and how salty it already is)
  • 1 can cream of mushroom condensed soup
  • 1/2 cup of shredded Parmesan cheese
  • 1/2 cup heavy cream, add more if you feel the soup is too condensed
  • 1/2 cup of fresh mushrooms
  • Parsley for garnish

1. Preheat oven to 365f

2. Combine garlic, salt, and shredded cheese in a bowl

3. Add chicken into a baking dish.

4. Top chicken with garlic mixture (#1)

5 In another bowl mix cream of mushroom and heavy cream, pour evenly over the chicken making sure each piece is covered with cream.

6. Bake at 365f until 165f, I always use a leave in thermometer to prevent overcooking, took about an hour though.

Cauliflower Mozzarella Sticks

It’s so good, I’ll make it short and sweet and get to the point. Cheesy Cauliflower Tots

Ingredients:

  • 1.5 cups of raw cauliflower
  • 2/3 cup breadcrumbs
  • 21 Seasoning Salute to taste (if you don’t have this you can put some garlic or onion powder instead to taste)
  • 2 string cheese
  • 1 egg
  • 2tbs olive oil for frying

1. Steam cauliflower

2. Blend cauliflower, egg, breadcrumbs, and seasoning – until pasty.

3. Cut string cheeses into 1/2 inch pieces, I’ve tried longer pieces, but they tend to fall apart.

4. Use an ice cream scoop and place on your hand

5. Add string cheese in the middle and cover it with the mixture (see video)

6. Add olive oil to pan and cook until brown

The Patterned Sandwiches

Every time I’ve made a cucumber and cream cheese sandwich,  the cucumber would always fall off. The Patterned SandwichesSo I came up with these little sandwiches. They just so happen to be beautiful.
At least in my humble opinion anyway. If you know me personally, I love creating party decor and food. I’ll definitely make these the next time I throw a shower or a birthday party. It’s easy, affordable, and delicious!

Ingredients:

  • Cream cheese
  • Cucumber
  • White bread
  • Strawberries

1. Use a peeler to cut very thin slices of cucumber and strawberries. You can also use a knife of course.

2. Heat cream cheese in the microwave for 15 seconds (just to soften it up). You can also just use spreadable cream cheese.

3. Spread cream cheese on bread

4. Layer cucumber, with some parts overlapping. Cut off  bread ends.

5. Repeat same steps above for strawberries

 

Bell Pepper Poppers

I really love jalapeño poppers, but I know my toddler always wants whatever I’m eating. Baked Bell Pepper PopersSo I compromised and made these. By the way the video shows one block of cheese in each wonton wrapper It definitely needs a lot more, you can also use cream cheese.

This is more suited for adults and babies with teeth. It gets crispy and a bit chewy. You can also make it into an egg roll shape for easier grasping and eating.

Ingredients:

  • Wonton wrappers
  • Green bell pepper
  • String cheese or cream cheese
  • 1 Egg white or water

1. Chop bell pepper and string cheese

2. Add bell pepper and string cheese in the center. Add a good amount of cheese. Dab egg / water (egg works better) on each corner. Pinch one corner with the opposite corner (watch video). Then do the same for the other corner.

3. Spray olive oil on baking sheet and bake at 400 f for 10-12 min,  or better yet fry it!
