Ham and Cheese Muffins

Here’s a twist to the old family favorite. Moist, and yummy especially straight from the oven. It’s sure to be a hit! This muffin is perfect for breakfast, lunch, or a side dish for dinner.

Ingredients:

  • 1 c. cooked chopped ham (we used Thanksgiving leftovers, but any will do)
  • 1 1/2 C. flour
  • 1 tbs baking powder
  • 1/2 tsp salt
  • 1 1/2 tbs sugar
  • 3 cups grated cheddar cheese
  • 1 cup milk
  • 1 egg
  • 1/2 stick of melted unsalted butter/ 4 tbs

METHOD

1. Preheat oven to 375F

2. In a bowl, mix first 6 ingredients until well combined (flour, sugar, baking powder, salt, chopped cooked ham and cheese).

2. In another bowl, mix milk, egg, and melted butter

3. Mix cheese mixture with milk mixture (bowl 1 + bowl 2) until well combined

4. Grease a muffin tin or use cupcake liners. Fill muffin tin about 3/4 of the way (enough to leave for rising)

Tip: mini muffins will cook faster so I always check it at 15 minutes for mini and about 20 for regular sized muffins. Use a toothpick to check, when it comes out clean it’s done!

4 Ingredient Turkey Pot Pies

After Thanksgiving, it’s easy to get tired of eating turkey day in and out.Turkey Pot Pies PhotoNaturally though, it’s hard for me to throw it away leftovers.  If you’re bored with turkey and mash potato or turkey sandwiches, this is a must try. This recipe only has 4 ingredients! You can also do this with left over chicken and make chicken pot pies.

Ingredients:

  • Crescent dough – Store bought
  • 1/2 c. cooked chopped cooked turkey
  • 1/2 c. canned cream of chicken / cream of mushroom
  • thawed garden vegetables
  • chicken seasoning or salt and pepper

Procedure:

Turkey Pot Pies Procedure

  1. Preheat oven to 400f
  2. In a bowl, mix turkey, cream of chicken and sprinkle a little chicken seasoning or salt and pepper. Set aside
  3. Using a glass or cookie cutter, carve out circles of crescent dough
  4. Grease a muffin tin with cooking spray and carefully place dough in each circle
  5. Add turkey mixture into each circle
  6. Using the leftover dough, cut strips and place it on top as shown above
  7. Bake for about 20 minutes, check at 15 minutes for desired browness

Healthy “Candy” Apples

I’m always looking for healthy snack alternatives. I try to give my son protein along with his fruit. Here’s a perfect combination! Candy Apples 2My toddler’s current obsession is being Mr. Independent so I let him dip his own apples.  The crimson gold miniature apples I found at the store is the perfect size (see the photo on the right for size comparison).

We use also use silicone divided plates so he doesn’t have 3 separate bowls to throw on the ground! They’re non-toxic and we use them daily.

Tip: If you can’t find the small apples you can use a melon roller and just scoop small pieces out.  PLEASE be very mindful of your child’s age as it may be a choking hazard. You can also cut it up into thin circular chips for younger kids.

Ingredients:

  • Apples
  • Popsicle sticks or skewers
  • Peanut butter
  • crushed almonds

Procedure:

  1. Wash apples and poke a stick or skewer into the apple
  2. Dip in peanut butter manually or use a butter knife
  3. Dip in almonds
  4. Enjoy!
