Sweet Potato Breakfast Bites

I’ve felt under the weather for a few days and of course it’s also a busy time for me at work. I had to think of something quick that was delicious and nutritious.

FullSizeRender (60)We love our eggs, sweet potato hash, and cheese for breakfast. I basically layered it all together,  stuffed it into a muffin pan and baked it! Voila, you have your grab and go breakfast. We only made six breakfast bites, but obviously you can make more!

Ingredients:

  • six large eggs
  • 1 sweet potato
  • 21 Seasonings Salute (Trader Joes, or any seasonings you want)
  • 1/2 cup shredded mozzarella cheese, or Italian blend (optional)

1. Preheat oven 350f

2. Peel and cut up sweet potato into match sticks or skinny fries

3. Grease muffin pan with olive oil spray

4.  Add sweet potato on muffin pan then add a little more olive oil spray

5.  Crack a whole egg into one muffin circle (check video for visual)

7. Add cheese and seasonings if desired

8. Bake at 350F for about 20-25 minutes, check it at about 20 min

Breakfast Sausage Bites

Prepared foods can be expensive and filled with sodium. If you buy organic, it’s even more pricey!  After making these homemade sausages, you’ll see how fast and easy it is to make.  Breakfast Sausage Bites B The bonus is you know everything that’s in it. I’ve also frozen what I don’t cook for the morning in between wax paper sheets and saran wrap. It works out great for busy mornings!

Ingredients:

  • 1 lb ground chicken
  • 1 apple grated
  • 1/2 tbs rubbed sage
  • 1/4 tsp salt
  • 1/4 c. chopped spinach (optional, but why not?)
  • Dash of garlic powder, cinnamon and pepper (to taste)
  • Maple syrup (optional)
  • Olive oil for cooking

Procedure:

  1. Mix all ingredients above (except maple syrup and olive oil)
  2. Form into balls or patties
  3. Cook in a pan with olive oil. Please don’t over cook, or it will be quite dry. Use an internal thermometer (170F well done) to make sure it’s not overcooked or raw
  4. Serve with maple syrup if desired

 

Deli On a Stick

I’m always looking for new ways to spice up lunch time. We are also trying to fit in as many activities as we can before his sibling arrives.  So that means lots of packed lunches!  I will be doing a 4 part series on lunches to go so please check back in!

Sandwiches are a bit boring after a while. My son has recently discovered kabobs and loves it. Deli On A StickHere’s an easy way to offer meals. I do supervise him since it is a wood stick, but there are some plastic options and you can use a straw too.  This meal fits perfectly in our Yumbox leak proof lunch box.  It’s divided into the important food groups so meal planning becomes a no brainer.

Ingredients:

  • Deli meat (we use no nitrate organic)
  • Cheese
  • Cucumber
  • Cherry tomatoes
  • Kabob sticks or straws

Procedure:

  1. Cucumber – with a peeler peel off a thin later of cucumber and roll
  2. Roll the cheese, cucumber, and deli meat
  3. Cut the cherry tomatoes lengthwise
  4. Poke through with kabob stick or straw

Slow Cooker Butternut Squash Soup

It’s been raining non stop here in Southern California. Butternut Squash Soup R (2)A perfect pairing to a dark gloomy day in my book is hot soup in a bread bowl. This is one of the few times I’ve ever made soup. I don’t know why I’ve waited so long to try it.  It’s so easy and delicious!

Ingredients:

  • 16 oz (1/2 small) butternut squash, halved, seeds removed
  • 16 oz (1/2) buttercup or kobacha squash, halved, seeds removed but not peeled
  • 2 large shallot, quartered
  • 2 cup chicken or vegetable broth
  • 3/4 cup light coconut milk
  • pinch nutmeg
  • optional garnish: drizzle coconut milk, chives, pepitas
  • garbanzo beans (I added this as a topping for extra protein, but it’s totally optional)
Procedure:
1. In a slow cooker, add squash, shallots and broth and cook on low for 8 hours or high on 4 hours. You’ll know it’s cooked when it’s soft and a knife can easily be inserted. Peel skin and discard the peel.
2. Stir in coconut milk and nutmeg. Blend in a blender or hand blender.
3. Season to taste with salt and pepper and garnish with more coconut milk and chives, if desired. Makes 5 cups.

Homemade Pancake Mix

Is the going back to work/school day giving you the blues? Nothing a little homemade pancake can’t fix. Homemade Pancake MixI’m starting to think about easy meals we can prepare once baby #2 is born. Here’s one that will for sure make the breakfast, maybe even dinner rotation. It keeps in your pantry and all you need to  add is an egg and a cup of milk when ready to cook. Beats all the additives in some boxed pancakes.

Ingredients:

  • 3 c. all purpose flour
  • 1.5 tbs baking powder
  • 1 tsp baking soda
  • 1/8 c. granulated sugar
  • 1/2 tsp salt
  • Fruit toppings, honey, maple syrup, or pancake syrup if desired

Procedure:

  1. Mix all ingredients except for toppings in a bowl and place in an air tight container
  2. When ready to make pancakes, just add 1 cup of pancake mix, 1 egg, and one 1 c milk
  3. Butter a griddle or non stick pan and pour batter onto the pan when hot
  4. Flip when the top of the pancakes bubble
  5. Top with your favorite toppings… and be happy!
