Breakfast Sausage Bites

Prepared foods can be expensive and filled with sodium. If you buy organic, it’s even more pricey!  After making these homemade sausages, you’ll see how fast and easy it is to make.  Breakfast Sausage Bites B The bonus is you know everything that’s in it. I’ve also frozen what I don’t cook for the morning in between wax paper sheets and saran wrap. It works out great for busy mornings!

Ingredients:

  • 1 lb ground chicken
  • 1 apple grated
  • 1/2 tbs rubbed sage
  • 1/4 tsp salt
  • 1/4 c. chopped spinach (optional, but why not?)
  • Dash of garlic powder, cinnamon and pepper (to taste)
  • Maple syrup (optional)
  • Olive oil for cooking

Procedure:

  1. Mix all ingredients above (except maple syrup and olive oil)
  2. Form into balls or patties
  3. Cook in a pan with olive oil. Please don’t over cook, or it will be quite dry. Use an internal thermometer (170F well done) to make sure it’s not overcooked or raw
  4. Serve with maple syrup if desired
