Fish and Chips

It’s been quite the transition from one child to two. Needless to say cooking with two is quite the challenge. Thank goodness, I have a husband who can cook!

If you’re looking for a less processed version of fish sticks, this is your recipe. Fish and Chips Resize1It is fried, but this momma isn’t complaining at this point. And sometimes fried food just hits the spot.  When I asked my other half which recipe he used. He said, ” Um, I just made it up.” That makes me chuckle, but boy was it good!

P.S. This is his recipe and instructions, I can only vouch for its deliciousness lol

Fish and Chips Bite Resize

Ingredients:

  • 5  cod filets (prepackaged,estimated)
  • 1 c. flour
  • 3/4 tsp baking powder
  • 1/2 tsp. salt
  • 1 egg
  • 8 oz ale beer (Greene King IPA is his preference)
  • vegetable oil

P.S. for any of you concerned about the alcohol, most  is cooked off during frying

Procedure:

  1. Mix all dry ingredients
  2. Add egg, then beer until batter has  no clumps
  3. Cut cod into strips 2 x 3
  4. Dip cod in batter. Do not over batter the fish (you should be able to see the fish)
  5. Cook in 375f degree vegetable oil or peanut oil until golden brown (usually 2.5 minutes on one side and then flip for another 2.5 minutes)

Fruit Rainbow

Happy St. Patrick’s Day everyone! It’s been a while since I’ve posted. Thanks for your patience. As many of you know we have a new addition to our family. He’s kept me up at night as expected and days are a bit busy since now I have two kids. Nevertheless, I always try to celebrate holidays with my boys in some fashion. We will be doing some St. Patrick’s day crafts today, but started out the morning with a rainbow fruit plate. Rainbow Resize I just gathered all the fruits I had in the refrigerator and used my imagination.

Ingredients:

  • Green – kiwi
  • Orange – carrots or oranges
  • Red – raspberries
  • Blue – blueberies
  • White bread
  • Cream cheese

Procedures:

  1. Cut fruit if desired
  2. Arrange fruit to make a rainbow
  3. Using shears or a cloud cookie cutter to cut out bread into a cloud shape
  4. Top bread with cream cheese and add to the ends of the rainbow
