A waffle recipe that has almost all the food groups in one bite! These veggie waffles are so tasty and just takes about 10 minutes to whip up. It brings a different dynamic to the traditional waffle.
I made these on a whim to try to see if I could get the kids eating vegetables in the morning. Fortunately it all worked out, I do have some tips below on how to make this a successful recipe! My boys loved waffles and cheese, so I married the two together. Being that I love adding veggies to everything, I made the base primarily vegetables!

Tips to make the perfect waffle
- Be Patient, I repeat Be Patient - This waffle does take some time to cook. It's tempting to open up the waffle maker to check if it's cooked but doing so prematurely will cause the batter to break apart.
- Grease Waffle Maker - I've made the mistake plenty of times to forget to spray each side of the waffle maker after every waffle. Don't forget!
- Use frozen riced cauliflower/sweet potato. While I've tried cauliflower on its own, the sweet potato really does help mask the cauliflower scent, so I suggest using the combination. I found the combination in my freezer aisle.
- Waffle Maker - Get a good waffle maker. That doesn't mean it needs to be expensive either! The one I bought is $20. It works great!
- Fill Waffle Maker generously - While the batter does tend to drip on the side when closed, filling it too thinly will create a very thin waffle. Just use a paper towel or kitchen towel and place it around the waffle maker to catch leakage.
I do have to admit this is a finnicky recipe, but once you get it right, it's going to make your weekly meals! It's good, guilt free and packed with nutrients! With all that said, this recipe is so worth it once perfected! It tastes great and a great way to hide the veggies!
How to make Egg and Cheese Waffle
First preheat your waffle maker.
Then in a medium to large size bowl, combine frozen riced sweet potato/cauliflower, cheese, and eggs.
Add in the milk and seasonings. By the way I've added garlic salt instead of salt and it tastes great!
In a large bowl, combine until all ingredients are well incorporated.
Spray cooking oil on both sides of your waffle iron maker and add mixture in. Wait between 5-8 minutes, remembering not to open too early, as it will break apart. Cooked until browned and serve with ketchup if desired.

Savory Veggie Waffles
Ingredients
- 10 oz frozen riced sweet potato/cauliflower steamed and cooked, patted dry
- 1 c. shredded cheese
- 2 eggs
- ⅛ tsp. salt
- ⅛ tsp. pepper to taste
- Olive oil spray
Instructions
- Preheat waffle maker. Cook riced veggies as directed, for best results I use the microwavable steam kind. Allow to cool and pat dry to remove as much moisture as possible.
- In a bowl, combine riced sweet potato/cauliflower, cheese, eggs, salt and pepper
- Grease waffle maker and add mixture
- Cook until browned, depends on waffle maker but between 5-8 minutes. Don't open too early, it won't stick together
- Serve with ketchup or sour cream
