Slow Cooker Beef and Broccoli

I decided to try putting everything I normally would add to a wok in a slow cooker. Now it’s in our weekly rotation of meals.


  • 1/2 c. low sodium soy sauce
  • 1/3 c. brown sugar
  • 2 tbs sesame oil
  • 3 cloves of garlic (chopped)
  • 1 c. low sodium beef broth or chicken broth
  • 1 lb beef (we used rib eye and cut it in strips, or chuck roast cut into strips as well)
  • 1 bell pepper
  • 3 large broccoli stalks (florets)
  • Dash of pepper
  1. Mix all ingredients except for veggies and beef in a bowl
  2. Add beef to mixture and place in a slow cooker on low until tender. This usually takes about 4-6 hours depending on your cooker)
  3. Add broccoli and red pepper about 30-45 minutes before serving. Any earlier and you will have soggy veggies.
  4. Serve over white rice

Tip: Each soy sauce and broth brands have a different amount of salt so you can reduce it if you feel it’s too salty. Another tip: I use a pressure cooker for faster cooking only 45 minutes. This is our favorite one –> Here (affl link)

FYI: The video below shows me adding the veggies before beef is cooked. My son woke up from his nap early, so I had to cut my video short ;). Please add veggies when the beef has been cooking for about 5 hours already. Otherwise you will have soggy veggies! 

Healthier Orange Chicken

I normally would make orange chicken breaded and fried. This time I went without the extra flour and excess oil. It’s not the same as take-out, but it’s guilt free and so delicious!


  • 1 lb chicken breast
  • 3 tbs corn starch
  • 1/4 cup orange juice (no pulp)
  • 1/8 cup tamari or low sodium soy sauce
  • 1/4 cup honey (no honey before one)
  • green onion (optional)
  • sesame seeds (optional)
  • 2 tbs vegetable oil
  • 1 tbs chopped garlic
  • 1/8 tsp ground ginger

1. Cut chicken breast in bite size pieces

2. Place in a ziplock bag and mix in 2 tbs corn starch. Set aside

3. In a bowl combine, orange juice, tamari, honey, ginger and whisk, and remaining corn starch. For a thicker sauce add one more tbs of cornstarch. Set aside

4. In a pan or wok, add oil. When heated add garlic.

4. Add chicken and brown until almost cooked

5. Add sauce over chicken until sauce thickens. Again, for a thicker sauce add more corn starch.

6. Garnish with green onion and sesame seeds. Serve over rice.

The Perfect Soft Chocolate Chip Cookie

My favorite dessert of all time is a warm chocolate chip cookie. Add walnuts to it and a glass of milk and I’m an extremely happy camper. I’ll make this short and sweet so I can go eat my chocolate chip cookie ;). By the way, this is a treat. I don’t give much sugar to my toddler, but once in a while he gets the real thing! Chocolate Chip Cookie Resize


  • 1/2 c. white sugar
  • 1/2 c. brown sugar
  • 1 1/2 sticks of unsalted butter (12 tbs) (softened)
  • 1 egg
  • 1 tsp vanilla
  • 1 ripe banana (if you don’t want to use banana, make it 3/4 cup of white sugar and 3/4 c. of brown sugar, and 2 sticks of butter)
  • 2 1/4 c. flour
  • 1/2 tsp. salt
  • 1 tsp baking soda
  • 1 c. semi-sweet chocolate chips
  • 1 c. chopped walnuts


  1. Preheat oven to 375f
  2. Cream sugars, butter, egg, mashed banan and vanilla in a large bowl
  3. Add flour, salt, and baking soda
  4. Mix in chocolate chips and chopped walnuts
  5. Using a scooper or spoon out balls of cookie dough
  6. Place on an ungreased baking sheet and bake 8-10 minutes until golden. The trick is to not overcook it. Check at 8 minutes to see if it’s browned around the edges. Flip it over and if it’s a medium brown, they’re done!
  7. Allow to cool on a cooling rack

Lasagna Rolls

I missed date night and came down with a nasty bug. All while being almost 9 months pregnant, mind you. No fun! I’m still recovering, but my family has to eat! Lasagna Rolls ResizeI had to scramble to make something yummy for the family. I had all these ingredients in my refrigerator with the exception of ricotta cheese. I went out for a bit to get some fresh air and grabbed some at the store. It was worth it because this was yummy! My toddler however, wasn’t a huge fan of ricotta cheese. It’s surprising because he loved his daddy’s lasagna recipe before! Kids I tell you. While he did eat a good helping, he did eat around the ricotta and managed to eat less than his normal monster size portion.


Prep Time: 15 minutes

Cooking Time: 30-40 minutes

Total Time: 50 Minutes

Yield: 3 servings


  • 1.5 ricotta cheese
  • 1.5 shredded mozzarella
  • 1/2 c. shredded parmesan cheese
  • 1 jar of your favorite pasta sauce
  • chopped spinach
  • lasagna noodles (about  6 lasagna sheets)
  • 1/2 lb ground beef
  • 4 chopped garlic cloves
  • 2 eggs
  • Salt and pepper to taste
  1.  In a pan, add a little olive oil and garlic, brown beef and season to taste
  2.  Cook lasagna al dente per box instructions, set aside when cooked
  3. In a bowl, mix 1 cup mozzarella, Parmesan, ricotta and eggs
  4. Lay noodles on a flat surface and add cheese mixture, then beef, sprinkle chopped spinach and roll

6. Add pasta sauce over rolls including bottom of dish. Add remaining mozzarella cheese.

7.Bake at 350f in a baking dish covered for 30 minutes. Optional: Add more mozzarella cheese on top and broil for a few minutes until cheese is bubbly and brown


Pizza Cheese Sticks

Looking for a tasty appetizer that’s not super unhealthy? Pizza Cheese Sticks DipTry this! It’s a twist to the homemade mozzarella sticks because it’s pizza flavored. My son loved them! The only drawback is he can’t have it melt in his mouth when its super hot for obvious reasons.

Prep time: 10 minutes / freeze for 30 minutes

Cooking time: 5 minutes

Total Time: 15 minutes

Yield: 2 servings

Pizza Cheese Sticks Final 3


  • 5 string mozzarella cheese sticks
  • 1/4 c. flour
  • 1/4 c. panko bread crumbs
  • 1/4 c. crushed pizza flavored crackers or cheese crackers
  • 2 beaten eggs
  • olive oil spray


  1. Separate all ingredients into bowls for easy dipping (except oil)
  2. Cut mozzarella sticks in size desired
  3. Add pizza flavored crackers into a ziplock bag. Smash crackers with rolling pin, glass, or by hand.
  4. Dip one stick at a time in flour. Then dip in egg, then panko breadcrumbs, then pizza crackers
  5. Place all coated sticks on a plate and freeze for 30 minutes (until frozen) MUST BE FROZEN, OR YOU WILL HAVE A HOT MESS.
  6. Preheat oven to 400F
  7. Add sticks to tin foil lined baking sheet and spray with oil
  8. Bake for 5 minutes each side. Check frequently and make sure cheese doesn’t melt completely.
  9. Serve immediately for adults, being careful
