A healthier twist to your fried rice! This cauliflower rice recipe is the best of both worlds. It pleases both the rice and veggie lover in you.
Rice alone is not rich in fiber. Rice lacks fiber and nutrition, but it's so hard to resist! It's a staple in my house and I grew up eating it. Not just eating it once a week, my family ate it at every meal. Why not add a little more nutrition by adding some riced cauliflower!

How to Make It
The first step is scrambling the eggs. In a pan, add 1 teaspoon of avocado oil.
Here's a pro tip for you: If you really want the rice to blend in, I would suggest using a microwavable cauliflower rice, or steam it. The longer you cook the cauliflower rice, the softer it will be. It will be closer to rice as you know it.

- Softer texture: Steam your cauliflower rice, or cook separately to achieve a softer texture, this will be less noticeable for picky eaters.
- Vegetable options: Thawed mixed/garden vegetables, grated carrots.
- Protein options: Fried scrambled egg, extra firm tofu

- How long will it keep in the fridge?
- You can happily keep them in the fridge for 3 days, that said, rice is best fresh. You'll need to add maybe 1-2 tb of water and cover with saran wrap so it will regain its softer texture. Again, though I recommend it fresh.

Cauliflower Fried Rice
Ingredients
- 2 eggs scrambled
- 3 tsp avocado oil divided
- 2 tsp sesame oil
- 1 large clove garlic minced
- 2 tsp ginger minced
- 2 green onions white and green parts chopped
- ½ cup broccoli florets or snow peas chopped
- ½ cup mixed veggies
- Dash of salt
- 1 ½ cup riced cauliflower
- 1 ½ cup jasmine rice cooked
- ⅓ cup soy sauce or coconut aminos
- 1 tbsp butter
Instructions
- Scramble eggs in 1 tsp avocado oil, remove from pan and chop into bite size pieces. Set aside.
- Add the rest of the avocado oil and sesame oil to the pan. Saute garlic, ginger and white parts of the green onions for 30 seconds.
- Add in broccoli (or snow peas), mixed veggies, and a small pinch of salt. Saute for 2-3 minutes.
- Add in rices, mix well and add in more oil if needed. Stir fry rice for 2 minutes, then add soy sauce.
- Stir fry for an additional 2-4 minutes on high heat, allowing time between stirs so the rice can caramelize a bit on the bottom of the pan.
- At this point you can add in the rest of the green onions, your egg, butter and adjust seasoning if needed.
