Baked Avocado Egg Rolls

Ingredients

  • 1 RIPE avocado read blog why
  • 1 Tbs. chopped red onions
  • 1 C. shredded cheese of choice
  • Dash of salt
  • Splash of juice from lime optional
  • Egg roll wrappers

Instructions

  • Preheat oven to 400F
  • Peel and remove seed from avocado
  • Chop into squares
  • In a bowl, mix all ingredients until well combined
  • Gently pull wrappers apart. Set on a plate
  • On a clean surface, place one egg roll wrapper with point facing you.
  • Add a small amount of the avocado mixture on the end of the wrapper (see video)
  • Roll as shown in the video
  • Seal ends with a little water
  • Spray baking sheet with cooking spray, then spray egg rolls so both sides are oiled
  • Bake until brown about 10 minutes each side.
