Ingredients

  • 1 c. sweet potato steamed about ¾ of a large
  • ¼ c. peas steamed
  • ¼ c. garbanzo beans canned
  • ¼ c. shredded cheese
  • ¼ c. bread crumbs
  • 2-3 tbs. flour see tip
  • 1 egg
  • Olive oil for frying

Instructions

  • Steam sweet potato and peas
  • In a blender blend potato, peas, garbanzo beans,and cheese
  • Add bread crumbs, flour and egg
  • Blend until combined, do not over mix
  • The mixture should be a thick pasty mixture
  • In a pan, add 2-3 tbs olive oil
  • Using a scooper scoop out the mixture and place on pan. Smash with a spatula or spoon to form a patty
  • Brown both sides
  • Serve with sour cream, ketchup, marinara, hummus, or yogurt sauce
