Ingredients

sweet potato
steamed about ¾ of a large

c.
peas
steamed
¼
c.
garbanzo beans
canned
¼
c.
shredded cheese
¼
c.
bread crumbs
2-3
tbs.
flour

Olive oil for frying
Instructions
Steam sweet potato and peas
In a blender blend potato, peas, garbanzo beans,and cheese
Add bread crumbs, flour and egg
Blend until combined, do not over mix
The mixture should be a thick pasty mixture
In a pan, add 2-3 tbs olive oil
Using a
scooper
scoop out the mixture and place on pan. Smash with a spatula or spoon to form a patty
Brown both sides
Serve with sour cream, ketchup, marinara, hummus, or yogurt sauce
