One Pot Cheesy Sausage Pasta

Ingredients

  • 1 pound uncooked linguine
  • 1 pound pre-cooked Italian rope sausage
  • 2.5 cups cherry tomatoes divided, see below
  • 6 garlic cloves
  • 1 white or yellow onion
  • 1 -2 large handfuls of basil leaves can also use spinach or half basil/ half spinach
  • 1 tsp salt
  • 1 tsp fresh cracked pepper
  • ½ tbsp Italian seasoning
  • 4 cups water
  • ½ cup or more fresh grated or shaved Parmesan cheese
  • ½ tsp parsley flakes
  • *You will also need a little olive oil and additional seasonings and basil as desired see below

Instructions

  • Start off my prepping your produce: cut tomatoes in half, peel and slice garlic cloves, thinly slice onion. Set produce aside.
  • Next, cut Italian sausage into pieces approximately ¼ inch in thickness. Also set aside.
  • In a large pot (wide enough to fit full length dry linguine noodles) combine all of the following: uncooked linguine, Italian sausage,
  • 2 cups only* tomatoes, garlic, onion, and basil.
  • Next, sprinkle salt, pepper and Italian seasoning over top everything in the pot and add 4 cups water.
  • Cover pot and bring to a boil.
  • Once boiling, remove cover and continue cooking until pasta is cooked al dente (approximately 8 min).
  • While pasta is cooking, fresh grate or shave your Parmesan cheese. (Can also use pre-grated cheese here, but it is so much better when made using fresh). Also, take reserved tomatoes, drizzle with a little olive oil and sprinkle with additional seasoning if desired. Toss to coat and set aside.
  • While pasta is cooking, toss pasta often to keep it from sticking, etc. Liquid should be mostly absorbed when cooking is complete.
  • When pasta is just barely done, add in Parmesan cheese and toss to combine. Sprinkle with parsley, and top with reserved tomatoes and additional basil, salt, and pepper, if desired.
